Peanut Butter Banana Sushi Roll

This is such a fun snack! A great mid-day pick me up if you’re in the mood for something sweet and filling. Kid and adult friendly, very quick to make and with very few ingredients you probably already have in your pantry. We all know bananas are a great source of potassium but they are also high in fiber, vitamins, and various antioxidants and phytonutrients. Summer snack tip: pack this in a zip lock and take on a picnic.


Ingredients

  • 1 whole grain tortilla

  • Nut butter of choice

  • 1 ripe banana (the spottier, the better)


Spread nut butter all over one side of the tortilla.

Add banana and roll the tortilla around the banana.

Slice into 'sushi rolls’.

Sprinkle with cinnamon, chia seeds, or honey.
