Cauliflower Alfredo

A creamy plant-based alternative to your classic Alfredo. Adding veggies to your sauces is a great way to sneak in veggies for picky eaters, so this is a great recipe for your littles. Cauliflower is loaded with fiber, vitamins, minerals, and antioxidants and is made up largely of water so it keeps things moving if you know what I mean ;)


Ingredients

  • 1 head of cauliflower

  • 1 cup milk (I used cashew)

  • 4 garlic cloves

  • Pasta of choice (I used red lentil spaghetti)

  • Red pepper flakes (optional)


Cook the cauliflower so it’s cooked through. Drain and add to blender. Add milk.

Sauté the garlic in oil for just a few minutes and add both to blender. Blend.

Cook the pasta.

Combine the pasta and the sauce. Top with red pepper flakes if you like a little spice.
