Lentil Dahl

In the mood for something warm but it’s summer so you don’t want soup? Enter Lentil Dahl. I have this when I’m in a cozy mood and want something really warm and grounding. Plus, lentils bring a nutritional punch and are packed with magnesium, zinc, iron and potassium. They are also made up of 25% protein so are an excellent source of plant-based protein.

Ingredients

  • Brown rice

  • 1 yellow onion- diced

  • 1-2 peppers- diced

  • 1 cup carrots- chopped

  • 1/4 tsp coriander

  • 1/4 tsp cumin

  • 1/2 tsp turmeric

  • Lentils

  • 2 cups water

  • 1 cup milk of choice (I used cashew milk)


Cook the brown rice.

While the rice cooks, sauté onions, peppers and carrots.

Add the seasonings, lentils and water and bring to a boil. Reduce to simmer until lentils are just about done. Add milk until lentils are cooked.

Plate the rice and add dahl on top.
