Kale Caesar

I made this recently for friends and everyone dove in for seconds. It was that good. It’s filling, taste-y, nutrient dense, and can be easily tweaked to include all your favorite salad toppings.

Kale is among the most nutrient-dense foods on the planet and is considered king of cruciferous vegetables. It’s loaded with vitamins, minerals and antioxidants and can help to decrease cholesterol. This one is definitely worth adding into your weekly meal rotation. Ingredients and full recipe below.

Ingredients

  • Bag / head of kale

  • 1 can of chickpeas

  • 2 sweet potatoes

  • 1 cucumber

  • A couple handfuls of pumpkin seeds

  • 1-2 avocados

  • Blueberries (quantity to your liking)

  • Parmesan (optional)

  • Croutons (optional)


Remove kale from the thick stems and massage with extra-virgin olive oil, salt + pepper. Let sit while you prepare the remainder of the ingredients.

Pre-heat oven to 375’.

Cube the sweet potato, season to your liking and bake for 25-30 minutes.

Spread the chickpeas on a baking pan, season with oil, salt + pepper and bake with the sweet potatoes. Remove once browned and slightly crunchy.

Slice cucumber and add to the kale. Also add remaining ingredients.

Once sweet potatoes + chickpeas are done and slightly cooled add to the salad.

My favorite dressing for this salad is the Primal Kitchen Caesar dressing with avocado oil.
