Green Pancakes
We have a weekend pancake tradition over here and we recently turned them green. Can you guess the green ingredient?
The secret ingredient is spinach! You may have already guessed that if you’ve seen my other recipes. I love to sneak it in, and for good reason. Spinach is a superfood and is loaded with nutrients that are important for skin, hair, and bone growth. Plus, since it makes a fun green color it’s a great natural food coloring.
Ingredients
1.5 cups of oats
1/2 cup milk (I use almond)
1 handful of spinach
2 eggs*
2 bananas
1 tsp maple syrup
Collagen peptides (optional)
Combine everything in a blender and blend. Pour in a pan on low heat and flip when the pancakes start to bubble.
You can top with your favorite nut butter or the usual butter + syrup combo. I used a local blueberry syrup topping above.
*You can substitute the eggs with an additional banana if you want to make it vegan.
