Brown Rice Bowl

Brown rice bowls are so easy to make and you can use any veggies you have on hand. These are great options for either lunch or dinner and can be made for the whole family. This recipe is packed with nutrients and is very filling. I don’t include measurements below as you can adjust for how many people or how hungry you are.

Pro tip: make a big batch of brown rice ahead of time to save time during the week OR make extra to get another meal out of it.


Ingredients

  • Brown rice

  • Chickpeas

  • Carrots

  • Peppers

  • Sautéed kale + edamame

  • Avocado

  • Favorite salad dressing (mine is Brizzo dressing)


Cook the brown rice. I like to season with ghee and salt & pepper.

Prepare each of the ingredients separately. I tend to do most of them raw to add some crunch.

Top with avocado and drizzle with your favorite salad dressing (or salsa) on top.
