Healthy Peach crisp
This creation was inspired by a recipe I found on Pinterest, with my own twist.
It is so simple, kid-friendly, and a definite crowd-pleaser. My version has significantly less sugar and no processed ingredients, unlike the store-bought versions. Like I always say, there is always a healthier alternative to your classic meals.
Not only is it insanely delicious, but peaches also have a ton of vitamins and nutrients. They even have a gram of protein! It’s been shown that peaches may have protective effects that keep your skin healthy. So you get to eat dessert AND have glowing skin; yes, please.
Time saver tip: you can pop it in the oven and let it bake while you make the rest of your meal.
Ingredients
Filling:
Fresh peaches (I used 10)
1 tsp vanilla extract
3 Tbsp coconut sugar
1/4 tsp nutmeg
Crumble:
1 cup oats
1 cup almond flour
1/3 cup coconut sugar
1/4 tsp salt
1/4 tsp cinnamon
1/3 cup almond butter (cashew works too)
1/3 cup melted coconut oil
1 tsp vanilla extract
Pre-heat oven to 350’ degrees.
Peel and slice peaches.
In a bowl, mix all filling ingredients and let sit while you prepare the crumble.
Mix oats, flour, sugar, cinnamon, and salt.
Then add in almond butter, coconut oil, and vanilla. Mix well (I used my hands) until the crumble becomes slightly sticky.
Pour filling into a baking dish, top with the crumble.
Bake for 35-40 minutes or until the crumble is golden brown.
