Healthy Pasta Salad
The perfect Fall recipe, but make it healthy. This can also be served cold for the warmer months.
Not only do sweet potatoes make this meal quite cozy, but they are also highly nutritious, filling, and are a great source of fiber, vitamins, and minerals. They have cancer-fighting properties and can enhance brain function. So maybe you’ll get smarter too? ;)

I used to be so scared of eating carbs because of the toxic diet culture myth “carbs are bad.” Now, I know that we need carbs, and when choosing suitable options, they provide us energy and pack a nutritional punch. This meal is light but filling and versatile; it can be served warm or cold. Enjoy!
Ingredients
Chickpea pasta
2 cups leafy greens (I used microgreens)
1 sweet potato
1 apple
1 can black beans
Your favorite salad dressing (I used Primal Kitchen Green Goddess)
Pre-heat oven to 400 degrees.
Cut sweet potato into cubes, coat in avocado oil and seasoning, and bake for 35-minutes.
Cut apple into cubes.
Cook the pasta and let cool.
Add all ingredients together and mix.
Top with salad dressing.
