Banana Oat Pancakes

Pancakes are a weekly staple in our household. Pancake Sunday started in quarantine and we’ve kept it going since. It’s one of my favorite weekly meals. You know what Marie Kondo says, if it gives you joy, keep it. Like all recipes I post, this is easy to make, kid-friendly, and so good. I usually serve alongside a green smoothie to get our veggies in, but you can also serve alone, with bacon or eggs, or however you enjoy it.

Ingredients

  • 1/2 cup oats

  • 1/2 cup milk (I use almond)

  • 2 eggs

  • 2 bananas*

  • 1/2 tsp vanilla extract

  • 1 tsp maple syrup

  • 1 Tbsp flax seeds

  • 1 scoop collagen peptides


Combine everything in a blender and blend. Pour in a pan on low heat and flip when the pancakes start to bubble.

On Sunday’s we usually have with butter & maple syrup but if I make them during the week we’ll use nut butter as the topping. Have fun with it and enjoy with your favorite toppings!

*You can substitute the bananas with apples or applesauce or if you want to make it vegan add an extra banana instead of the eggs and skip the collagen.
