Baked (vegan) Feta Pasta

Taking the Tik Tok #bakedfetapasta trend to a whole new, healthier level. I didn’t have many expectations for this recipe but wow, it was divine. I used a chickpea flour pasta and swapped the feta for vegan feta, plus added spinach. It was so creamy, so flavorful, and so memorable. Check out my version of the recipe below.

Ingredients

  • 1 carton cherry tomatoes

  • Pasta of choice (I used Banza chickpea pasta)

  • Vegan feta (I used Violife)

  • 2 handfuls spinach

  • 1 Tbsp oil (I used avocado oil)

  • Seasonings of choice


Pre-heat oven to 350 degrees

Add tomatoes and vegan feta to a baking dish

Drizzle with oil & your favorite seasoning

Bake for 25-minutes

While baking, cook the pasta

When there is ~5-minutes left add spinach to the baking dish

Remove from oven and add pasta, stir and enjoy!

I like to serve with a side of veggies (mushrooms are my fave!)
