Vegan Chocolate Muffins

Is there anything much better than a perfectly gooey muffin? Perhaps one you knew had nutrient-dense ingredients in it. This is that muffin.

What started out as an experiment, turned into a heavenly dark chocolate muffin with an ingredient you’ll never guess. Hint: it’s green.

Some of the numerous benefits of consuming 65%+ dark chocolate are heart health, skin & hair care, reduces inflammation, anticancer potential, reduces blood pressure & cholesterol, boosts immunity, and improves cognitive function, among dozens of other benefits.

Ingredients

  • 1/2 cup almond milk

  • 1/4 cup maple syrup

  • 2 tsp vanilla extract

  • 2 handfuls of spinach

  • 2 bananas (the riper the better)

  • 1.5 cups of oats

  • 1/3 cup cocoa powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • Chocolate chips (dark chocolate 65%+ preferred)


Pre-heat oven to 350 degrees.

Blend all ingredients together until smooth (leave out the chocolate chips).

Pour into muffin pan and top with 1-3 chocolate chips.

Bake for 15 minutes or until cooked through.
